Once you change your character's name on the elevator out of the Vault, the new saves will be located under a different character slot in the load menu.
Like most have said in the replies, just going through the intro and saving right before the elevator to exit the Vault (with the name "New Game" or something as an option to make it more clear what that save file is) and then just loading that file when you want to start a new game.
